Why we crave sugar: Fructose

Table sugar is made up of 50% glucose and 50% fructose.  Unique among sugars, Fructose has a strong effect on the performance of our cells.

Upon entering the cell, it saps cellular energy (converting ATP to AMP).  Then it generates the waste product uric acid.  This is likely our primary source oxidative stress.  This suppresses the function of our mitochondria, crippling the cell's input and output of energy. 

Without cellular energy, our body assumes it is starving, and encourages appetite — often of more fructose sources.  This begins a feedback loop of cellular energy suppression.  As we continue to reduce cellular energy and increase appetite, we increasingly crave sugar until it resembles a full blown addiction.

Why does this happen?  By reducing the cell's ability to use or generate energy, it creates a state of energy conservation and storage.  All signs point to this being a survival function.  By helping the animal gain weight, most improve their chances of survival during times of scarcity.  This fits what we see in nature, as natural fructose sources (fruit) are often ripest before the meagre times of winter.  Without fructose, many species may not exist today.

Carbohydrates

Our bodies synthesize Fructose through the polyol pathway when blood sugar spikes due to a high glycemic load. The quantity and speed of carbohydrate intake determine this synthesis—a process unique to each person and carbohydrate source, making it a challenging aspect to manage.

Dietary Fructose

FRUCTOSE is a type of sugar commonly found in fruit, honey, table sugar, and high fructose corn syrup. Natural sources are most available shortly before winter, allowing animals to bulk up before times get tough.

Salt & Dehydration

To the body, DEHYDRATION is a scarcity of water.  This emergency state triggers also the production of Fructose.  Why?  Because 1 gram of glycogen can store up to 3 grams of water.  So Fructose, which encourages increased calories, activates a system that maximizes water storage. Unfortunately, obesity often leads to chronic dehydration due to glycogen's water-retaining properties.  If you are overweight: please drink more water!

The fructose trigger is the saltiness of our blood.  When our blood becomes dehydrated, its salt concentration increases.  Thus, both salt intake AND proper hydration are two sides of the same coin. Preventing fructose synthesis caused by dehydration involves increasing water intake and/or reducing salt consumption.

Alcohol

ALCOHOL and sugar cravings are closely linked. People who stop drinking often start craving sugar. Could an alchol problem really be a fructose problem? New research has revealed that alcohol consumption triggers the production of fructose in the body, particularly in the liver.  It also induces dehydration which is another trigger for Fructose synthesis.

Interestingly, inhibiting fructose metabolism has been found to reduce alcohol cravings. This discovery has sparked additional studies to investigate whether targeting fructose metabolism could be a fresh approach to treating alcoholism.

Savory Foods

The primary way Fructose affects our cells is by generating uric acid within the cell.  Thus, consuming UMAMI foods that are high in uric acid causes the same result, just without the Fructose. Fortunately, most individuals are less inclined to excessively consume umami-rich foods.
